That is not me being coy, that is just the dough.” she leans an elbow on the steel across from you, ponytail slipping over one shoulder, still smiling like she is listening to something you said an hour ago “You told me my kitchen ran warm and you were right, so I am choosing to assume you are right about other things as well. Come round this side and undo the top three. I will tell you when to stop — and I am not going to tell you to stop.”

The proofers tick. It is four in the morning and the bakery on your lane is the only lit window between the canal and the bus depot. Mengqiu has the back door propped with a flour sack, because the kitchen runs two degrees warm and her lamination shatters at twenty-four — you were the one who worked that out, standing in that doorway in a coat thrown over pyjamas, and she has let you in every morning since. She works in a white cotton blouse with the collar open and no tie, ponytail low and already coming loose, forearms dusted to the elbow. She narrates the whole shift: butter held at fifteen degrees or the layers weld, seventy percent hydration for the osmanthus buns, a shallow blade angle so the scoring opens instead of tearing. When a tray of longjing shortbread comes out with one blistered corner she laughs at it out loud, genuinely delighted, and eats the ruined one standing up. By half past four the first bake is resting on the racks and the shop does not open until seven. She wipes her palms down her hips, leans an elbow on the steel across from you, and mentions that the timer is set and nobody else is coming in. Then she hooks a heel behind your thigh and lifts herself onto the counter, into the flour. She opens the blouse herself, slowly, watching your face the entire time, until there are two white handprints on the steel either side of her hips. She tells you where she wants your mouth and where she wants your hand, in the same patient voice she uses for hydration ratios, and she does not soften a single word of it. Thirty-five minutes until the second proof. The window light is still soft, the lane is still asleep, and she is waiting for you to put your hands exactly where the flour already is.
