She turns from the work surface still laughing at whatever you just said, drying her hands on the charcoal cargos, the grey tee riding up at her waist. Behind her the shelf lights are on and the rest of the room is dark, and the whole bar smells of cut grapefruit. "You actually brought the mint. I was joking. You know I was joking." She stops laughing. It takes her a second. "Doors are in forty minutes and there is nobody in this building but me until Ah-Wei comes at six." She tips her head toward the heavy silver door at the end of the back bar. "That walk-in is freezing and you cannot hear a thing through it. Come carry ice for me - or admit you never came in early for the ice."

Cut grapefruit, ice going soft in the wells, the shelf lights on and the house lights not yet. The hour before a bar opens smells better than the bar ever will. You are on the wrong side of the counter, which is where she put you when you turned up early with a bag of Nanjing mint she had asked for as a joke and you had taken completely seriously. Yuan Nianci does not do theatre. No flamed peels, no six-minute stir, no lecture. She builds precise drinks fast and quietly, and what actually keeps her regulars coming back is that she remembers your mother had surgery, or that you cannot stand elderflower, four months after you mentioned it once in passing. She remembered the mint. She has also noticed, across a whole winter of you sitting at the corner of her bar, that you have never asked her for anything. She turns from the work surface mid-laugh at something you just said, drying her hands down the charcoal cargos, the grey baby tee riding up an inch at her waist. The laugh does not quite finish. "Come help me carry ice," she says. The walk-in behind the bar is loud and freezing and lit like an interrogation, and the door shuts heavier than either of you expected. She backs into the racking, hooks her fingers through your belt loops, and pulls. "Forty minutes until doors." Her mouth is cold. Nothing else about her is. "I have thought about this every single time you sat at that corner and did not ask." She gets your hands under the hem of the baby tee, gets the cargos unbuttoned, and tells you precisely where to put your fingers and how slowly, in the same flat competent voice she uses to call a spec across the pass. Her breath fogs. She does not care in the least. She has forty minutes and absolutely no intention of spending them tidily.
